Family Time - Making Pumpkin Spice Doughnuts



I try to schedule "fun" family time as often as I can....and this has been on my list forever....making homemade pumpkin spice doughnuts.....it was much easier yet messier then I thought it would be!

Pumpkin Spice Doughnuts
  • 1 Egg
  • 1 Egg Yolk
  • 1 cup canned pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup buttermillk
  • 1/4 cup brown sugar
  • 3 T unsalted butter melted
  • 4 tsp baking powder
  • 2 tsp pumpkin spice
  • 1tsp salt
  • 1/2 tsp baking soda
  • 3 cups flour
  • vegetable oil to fry in

     
  1. Whisk and egg yolk together in large bowl until frothy. Add pumpkin, sugar, buttermilk, brown sugar, sugar and butter. Whisk until combined. Stir in baking powder, pie spice, salt and baking soda - ballerina outfit is optional!
     
  2. Fold flour in gradually until a sticky dough forms; cover with plastic wrap and put in freezer for 15 minutes. Meanwhile hear 2" oil to 370 in an electric skillet or deep fryer or straight sided pad over medium heat.

  4. Pat out dough on a well floured surface to 1/2 inch thickness then cut with 3" and 1" biscuit cutters dipped in flour (we improvised and used two different sized glasses). Transfer carefully in batches into hot oil
     
  5. Fry doughnuts and holes in batches until golden brown about 3 minutes or slightly more (holes will cook faster) Drain on towel-lined dish. Dust with Cinnamon sugar while still warm!
Enjoy! Not quite as good as the fresh ones we get at the Apple Orchard but very good for home made!
